Sharmaji's Stuffed Mushrooms
This
is a unique combination of Indian and Western cooking. The flavors are
unique. Everyone fortunate to receive his cooking raves about these.
All
of his recipes are low in fat, non-dairy, and vegetarian.
Ingredients:
1/2
cup garbanzo flour, roasted in a skillet till golden brown
1/2
fine bread crumbs, Jaclyn's whole wheat bread crumbs
1
lb. of white mushroom caps with stems removed completely, washed and dry
1
small minced yellow onion
1
tsp. salt
pinch
of cayenne
1/2
tsp. garlic herb seasoning
1
inch of fresh peeled ginger minced
2
Tbl. olive oil
1/2
tsp. of ground cumin
1/4
lb. soy chedder cheese
flatbread
crackers broken into 1 inch pieces
fresh
coriander leaves
We
obtained the garbanzo flour from our local health food store. The store
owner simply ground up a package of garbanzo beans for us.
To
mince the onion and ginger, we put it together in a small electric
Handy
Chopper.
Mix
the flour, bread crumbs, onion, salt, cayenne, ginger, garlic, and
cumin
in a bowl with clean hands. Add the olive oil and mix well.
Stuff
the mixture into each mushroom. In a medium hot skillet, pre-sprayed
lightly
with a vegetable oil, put the stuffed mushrooms with the stuffing
facing
upward. Next to each mushroom add just one drop of olive oil. Turn over
after several minutes and cook the stuffed side for several minutes.
Turn
several times until nicely browned. Do not let the stuffing become
black.
Remove
from heat and top with small slices of soy cheddar cheese, a coriander
leaf, and a piece of flatbread cracker. Enoy!
