Cooked Green Papaya
Ingredients:
2 to 3 green papayas
1 TBl. Olive oil
1 tsp. cumin
1 tsp. salt
dash of asafoetida (optional)
dash of tumeric
lemmon or lime
Prepare papaya by peeling all exterior hard part and discarding. Remove
seeds. Cut papaya into 1 inch squares.
Heat olive oil in skillet. You will know when it is hot enough when the
cumin looks white when added. So test with one before adding all the
cumin. When hot add cumin and asafoetida. Then immediately put in the
papayas. Mix it well.
Add 1/2 cup of water and sprinkle tumeric. Add salt. Cover and cook
over medium heat until soft to touch. Test with fork to ensure well
cooked. Do not let it go dry, add water as needed. When done sprinkle
with lemmon or lime. Enjoy.
